How do I make copy/paste overwrite text work?

I don’t understand why a simple operation like copy/paste-over-write in this document (or VS) is such a mess: This doesn’t conform to any other programmes, I know of.
- Simple command-drag select text is impossible: Is it correct one have to command-click twice everytime to select a part of a text?
- Why do VS insert text in the end of string every time I select something to overwrite?
Have I put something incorrectly in settings?
