      1. In the New Document Setup, under the Artboard tab, specify 200x200 for default artboard size.
      2. Also in the New Document Setup, under the Canvas tab, specify 200x200 for default canvas size. Make sure "Large Canvas" and "Automatic Canvas Size" is unchecked.
      3. Click OK to create a document with the specified default canvas and artboard size.
      4. Draw a rectangle that is wider than the 200x200 artboard, so the left side of the rectangle extends off to the left of the artboard, and its right side extends off to the right of the artboard.
      5. You should not see the parts of the rectangle that is off the artboard since both the artboard and the canvas is 200x200.
      6. Open the Canvas & Artboard panel and select Canvas 1 then select Canvas Options form the panel menu.
      7. Notice on the Canvas tab of the Canvas Options panel that Default Size is checked. However, the default size is specified in the New Document Setup to be 200x200 so the canvas should clip the rectangle you just draw. (You can also verify the document's artboard and canvas size by clicking on the Document button up in the context toolbar.)
      8. So back in the Canvas Options panel, uncheck the Default Size checkbox in the Canvas tab, type in the default canvas size for width and height (200x200) then close the Canvas Options dialog.
      9. On my laptop there's a redraw issue at this point but once you scroll the mouse you can see that the canvas now clips the rectangle.

So it seems the default canvas size is not honored neither in the New Document Setup nor in the current Document Setup dialog.
