After choosing one option for the stroke's attribute in the Appearance panel, the pop-up menu turns off.
It allows you to change only one option at a time.

Without stoke selected, it doesn't disappear until user wants to - Record it

@Harry Yes, this can be replicated on Windows. Will be fixed ASAP.
